Easy Fresh Peach Cobbler
This easy peach cobbler recipe is made from scratch with ripe, juicy peaches and a simple butter batter. As it bakes, the batter rises around the peaches to create a golden topping with crisp edges and a soft tender center. It takes only 10 minutes to prepare and bakes in a standard 9 x 13 inch dish. Serve it warm with a scoop of vanilla ice cream for the perfect late-summer dessert!

Why You’ll Love This Peach Cobbler
- Fresh peach flavor – five generous cups of ripe peaches!
- Made from scratch – no cake mix, bisquick, rolling, or biscuit cutting required!
- Quick prep – this cobbler takes only about 10 minutes to assemble!
- Perfect texture – the topping bakes up golden around the edges and soft and tender in the center. Perfection, if you ask me! :)
- Even better the next day – yes! This is one of those desserts that’s even better after the flavors have had time to meld together. It’s not often that there’s leftovers the next day, though!
What Kind of Peach Cobbler is This?
Depending on where you grew up, “cobbler” may mean fruit covered with pie crust, biscuits, or a portable batter. This is a traditional batter-style cobbler. Melted butter goes into the baking dish first, followed by the batter and peach mixture. The layers are not stirred. As the cobbler bakes, the batter rises up and around the peaches, creating a beautiful golden top. It’s magical!
The first peach cobbler I remember eating was made in a Dutch oven over a campfire when I was a teenager at girls’ camp. I’ve loved cobbler ever since! This easy oven version gives me that same comforting combination of warm fruit and buttery topping without needing a campfire or a boxed mix.

Ingredients for Fresh Peach Cobbler
- Fresh peaches: Use ripe, peaches that have a little give to them when gently pressed. You’ll need about 5 cups of peaches after peeling and slicing which is approximately 27 ounces or 770 grams.
- Granulated sugar: Sugar sweetens the batter and the peaches. See the recipes notes for two tested, less-sweet variations.
- Unsalted butter: Melted butter gives the cobbler rich flavor and helps create crisp, golden edges.
- All-purpose flour and baking powder: These form the base of the batter. One tablespoon of baking powder gives it enough lift to rise around the peaches. As I said earlier, it’s kind of magical!
- Milk: Brings the batter together.
- Lemon juice: Brightens the peaches and balances the sweetness. If you don’t have lemon juice on hand, no big deal.
- Vanilla and cinnamon: Add a little something something special and delicious!
- Salt: Just a bit is all you need to balance out the flavors.
How to Choose Peaches for Cobbler
The best peaches for cobbler are ripe and juicy but still firm enough to peel and slice. Look for peaches that smell fragrant near the stem and give slightly under pressure. Avoid peaches that are super hard, bruised, or so soft that they collapse when sliced. I always go for yellow peaches as my first choice because their flavor holds up well when baked.
How to Peel Fresh Peaches
If your peaches are fully ripe, a paring knife is all you need. For peaches with stubborn skins, score a shallow X on the bottom of each peach. Place them in boiling water for about 30 seconds, then transfer them to a bowl of ice water. Once cool enough to handle, the skins should peel off easily. Slice the peaches as evenly as possible so that they bake at the same rate.
How to Make Peach Cobbler with Fresh Peaches
- Prepare the oven and pan. Preheat the oven to 375°F. Pour the melted butter into a 9-by-13-inch baking dish.
- Mix the batter. Whisk together the flour, 1 cup of granulated sugar, baking powder, and salt. Add the milk and stir just until combined. Pour the batter over the butter. Do not stir.
- Cook the peaches. Combine the sliced peaches, remaining 1 cup sugar, vanilla, lemon juice, and cinnamon in a large saucepan. Bring to a boil while stirring constantly.
- Layer the cobbler. Carefully pour the hot peach mixture evenly over the batter. Do not stir—the separate layers are what allow the batter to rise around the peaches.
- Bake for 40–45 minutes, until the top is deeply golden and the fruit is bubbling around the edges.
- Cool slightly. Let the cobbler rest for about 15 minutes before serving. This allows the juices to settle and the topping to finish setting.

How to Know when peach cobbler is done
The cobbler is ready when the top is evenly golden brown, the edges look set, and peach juices are bubbling around the sides of the dish. The center should no longer look like wet batter. Ovens and baking dishes vary, so begin checking at 40 minutes and add a few more minutes if needed.
Tips for the Best Peach Cobbler
- Measure the peaches after peeling, pitting and slicing for the most consistent ratio.
- Use ripe peaches for the best flavor, but not mushy!
- Stir the batter only until the dry ingredients disappear. Do not over-mix.
- Do not stir the butter, batter and peaches together in the baking dish.
- Set the baking dish on a rimmed sheet pan if it is especially full or your peaches are really juicy.
- Let the cobbler rest before serving so that the juices can slightly thicken.
- Serve with warm vanilla ice cream or whipped cream.

Notes
Can I Use Frozen or Canned Peaches?
This recipe was developed specifically for fresh peaches. Canned peaches are already softened and may be packed in sweetened syrup while frozen peaches can release additional liquid as they bake. For the best results, I recommend making this cobbler with fresh peaches.
How to Store and Reheat Peach Cobbler
Once the cobbler has cooled, cover the baking dish or transfer leftovers to an airtight container and refrigerate. The leftovers taste even better because the flavors have time to meld together. Reheat individual portions in the microwave or in a 325 degree F oven until heated through. The topping will be soft after refrigeration but will regain some texture in the oven.
